I keep the interface as empty as I can, and work from there. Easier said than done, since there are business goals to be met. But that's exactly where the challenge gets interesting.

It gives insights I would never expect. Interviewing users, watching them perform tasks in real time, having them choose between different scenarios. Of course, it all depends on the context.

Prototypes

I often create clickable prototypes that allow users to test-drive an app before it's made. Sometimes, I even program versions just to test because it's faster than faking it. Whatever sets me on my way to the next UX level.
